I can understand and respect your points here.
To be totally fair, Bazzite can be used to do anything any other Linux distro can do, it’s the beauty of Linux. I’ve set mine to run .NET, PHP, and node. Had to use containers for SQL server, but got that going too.
Yes, it’s a bit of a pain, but it’s been my favorite Linux experience so far.
Bazzite is my first one. Was a kubuntu user before it, and sabayon way back in the day.

The sidewalks thing I have personal anecdotal evidence for. I have lived in MANY areas, including my current city, where there are very few sidewalks outside the main street.
Yeah, some of the same reason everyone uses stripe or PayPal for payment systems. If the site itself handles the cc info it holds all the liability, and has to pass rigorous POC testing and compliance.
I’ve reached that point as well. Every new thing I sign up for I use an alias email, because I’m certain they’ll sell my shit at some point, and I’d like to be able to know who did it.

I used Nova for as long as it’s been a thing. Paid for pro. Abandoned it immediately after they released the news a few weeks ago about the tracking and ads.
I switched to Octopi Launcher. It’s really good, and in active development. Author listens to his users and is always adding fun new features.
He was my favorite to watch, never enjoyed bear grill’s version.
