The term was coined as a word for hatred of Jewish people. There was no existing meaning to take away. If someone is racist against Arabs, call them racist against Arabs. Quibbling over definitions just comes off like you don’t have a better argument, especially when you’re wrong about the definitions. Being racist against Arabs isn’t bad because it’s antisemitic, it’s bad because racism is bad.

As I mentioned with homophobia, etymology is not the same as meaning.
Israel has a few factors that intensify this particular effect. Their government playing into it constantly is certainly part of it. Also, Jewish people made up notable minorities in many countries, but majorities in zero, between about 586 BCE and 1948 CE. The insular nature of those minority communities made them an easy scapegoat for a lot of groups for those ~2500 years, so a lot of cultural significance was put into the perceived need to be a majority somewhere. Unfortunately, a lot of people don’t want to get rid of the boot, they just want to be the ones wearing it.
Public approval for the Vietnam War was at 34% in 1971, when Singing in Viet Nam Talking Blues released.
Public approval for the Iraq War hit a high of of 80% one month after the Dixie Chicks’ comments, so I think it’s a safe assumption that it was in the high 70s when they spoke out.
Had they waited until it was politically convenient to speak out, they probably wouldn’t have had the same level of backlash, but they had more spine than that.

“Antisemitism” means hatred of Jewish people. It isn’t a general term for hatred of Semitic people, just like “homophobia” isn’t a fear of sameness, it’s hatred toward gay people. Hating Palestinians makes you a horrible person, but it doesn’t make you antisemitic (though there’s certainly plenty of overlap).

The bad cops have tons of claims, the insurance becomes unaffordable, and they have to quit.
